  • 200g fusilli or penne pasta
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1 cup shredded cucumber
  • 1 cup coleslaw mix
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt and black pepper to taste

Method
 

  1. Boil pasta in salted water until al dente, then drain and rinse with cold water.
  2. Whisk mustard, olive oil, vinegar, minced garlic, and herbs until smooth.
  3. Toss hot pasta directly into the dressing to coat evenly.
  4. Add diced cucumber and coleslaw mix, then refrigerate at least 1 hour before serving.

Serve chilled. Add additional herbs for a fresher taste. Can be made 24 hours ahead for more intense flavor.
