  • 2 cups cubed watermelon (about 1 small melon)
  • 8 oz crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 4 sprigs fresh mint or basil, torn
  • ¼ cup toasted pine nuts or slivered almonds (optional)

Method
 

  1. 1. Cut watermelon into 2cm cubes and remove rind.
  2. 2. Crumble feta directly into a large bowl.
  3. 3. Drizzle olive oil, salt, and pepper over the feta, tossing gently to coat.
  4. 4. Add watermelon cubes and mix carefully to preserve texture.
  5. 5. Just before serving or storing, top with fresh herbs and optional toasted nuts.
